Making Maple Cream


Making Maple Cream....I wish I was writing this from experience but I'm not. I made maple cream years ago but it separated as quickly as it cooled. So here's a step by step recipe I found online. I'm going to give it a try. Looks wonderful. I am worried maple syrup season will stink with this horrible winter.

I'm wondering about that too. But supposedly, it's the spring, summer, and fall that determines sap flow not the winter. I'll have to look this back up again. I'm glad to see I'm not the only one thinking about this already! 2 more months. Although they say Feb. 14th is the first official day of maple syrup season in Maine. I usually start around March 1st. How about you?

You're not kidding! I'm already starting to get ciked! In that article, or maybe it was another, I read that the syrup is getting darker as climate change affects become more impacting. I did notice that last year that I only had one really light run and the rest of the early runs were dark for early runs. Thought it was a fluke. Will be interesting to see if it happens again this year. Let's keep our fingers crossed for a good year.

I make my own wine (usually form a kit). Wonder how this do this.

I don't know. Maybe adding maple syrup instead of sugar?
